Now, precisely 731 years after this historic event, three new testaments to genuine Swiss willpower are creating a sensation.

SI-ON Lake Breeze

Smooth – White

The lake breeze is a light and fresh Swiss vermouth with a summery fruity taste. It was designed as a tribute to the numerous lakes that characterize the Swiss landscape.

SI-ON16.5% VOL

The base is a Chardonnay-Chasselas cuvée. This is fortified with pome fruit brandy and refined with local herbs such as calamus and alfalfa.

SI-OFFnon-alcoholic

The basis for SI-OFF is dealcoholized Swiss white wine. In addition, various herbal and flower infusions, as well as exclusively natural flavors were processed.

Semi-dry – Red

A complex and deep red Swiss vermouth with needle-like, leathery and woody aromas. The smell and taste of the Swiss forests can be found in the sensory of the vermouth Waldrauschen.

SI-ON18.5% VOL

The basis is a red wine cuvée from the grape varieties Gamaret and Garanoir. This is reinforced with Swiss pome fruit brandy and numerous ingredients from near the forest, such as spruce needles and nettles.

SI-OFFnon-alcoholic

A non-alcoholic Swiss red wine is the basis. This is supplemented by infusions of those ingredients that were also used in SI-ON Waldrauschen, as well as exclusively natural flavors.

Uncompromisingly natural without preservatives

Distillerie Studer and Cave Fin Bec have joined forces to produce a vermouth that makes no secret of its debt to nature and naturalness. The two companies reject the use of preservatives and artificial flavourings. Everything in this creation is 100% Swiss. The fruit brandy comes from Escholzmatt and the wine from the Valais. The herbs, with which the vermouth is enhanced, are all indigenous to Switzerland.

Also in the non-alcoholic variants SI-OFF was worked exclusively with natural ingredients. State-of-the-art technology was used to dealcoholize the wines in order to preserve full flavor thanks to a special aroma recovery process. This made it possible to dispense with artificial flavors and flavor enhancers.

  • Drink - Kirsch Martinez

    Kirsch Martinez

    Mystical, resinous, spicy an welcoming at the same time. For us, an unmistakable allusion to the Swiss forest. We have succeeded in capturing these flavours with the help of the best Swiss cherry brandy and Swiss wine. In this cocktail they are underscored by an extra dash of cherry brandy and cherry liqueur.

    Preparation

    Stir all ingredients well in a mixing glass over ice. Finally pour into a pre-chilled glass without ice and garnish with a cocktail cherry.

  • Drink - Swiss Tuxedo

    Swiss Tuxedo

    Our SI-ON Mountain Storm vermouth expresses the rugged, harsh world of the Swiss mountain peaks. The minerality and bitterness of the drink are offset by the sweetness of the Old Tom Gin and a few drops of cherry liqueur. Perfect for a toast on reaching the summit (if you’ve remembered to bring the bar with you)!

    The Seventh Sense Orange Bitter
    2 dash
    Studer Cherry Liqueur
    1 dash

    Preparation

    Stir all ingredients well (except absinthe) on ice in a mixing glass. Then pour without ice into a chilled glass and finish with a dash of absinthe and a plump cocktail cherry as garnish.

No wonder. After all, it was their idea.

September 2020. Over a dozen bartenders from Austria, Germany and Switzerland gather at the Studer distillery in Escholzmatt for a master class. Their aim: to rethink the concept of vermouth.

The result: the idea for three new vermouths. Each unique in itself, but with one thing in common: the expression of a new generation of vermouths.

We have interpreted two of them as non-alcoholic variants, using state-of-the-art technology for outstanding taste.
